Vineyard Road winery at Langhorne Creek 2017 Pinot Grigio.

Not a bad drop. Very dry, good for a hit summer day, load it up with ice.

As it warms up from fridge temperature some fruit becomes noticeable in the nose. And on the palate. Bit of fruit is softening the dryness. Not a sweet wine but when warmed up from fridge temperature is more complex, more interesting, nice wine.

But I bought it for its assertive dryness.

Yes, I read the fucking recipe correctly!

Have a whole book on American soda breads incl muffins. Will post some recipes.

Soda bread is quick to make: mix dry ingredients, mix wet ingredients. Add wet to dry ingredients, minimum of stirring and into the oven!

Buy new baking powder every year.

I didn’t like the corn bread I made, so will find another recipe.

Recipe I used called for half a cup of oil: two dishes I made, an olive oil cake and the corn bread, didn’t really like either. So—no more breads/cakes with more than a tbsp or two oil. Simple!

Corn bread is a soda bread. Just means the raising agent is baking powder (sodium bicarbonate) not yeast. In America corn would be cheap I suppose.

I've made a Chilli Beef Cheek Casserole....with Mushroom and Veg

Slow cooked... it was/is magnificent in every sense.
Two Beef Cheeks, trimmed and cut into nice sized chunks.. ( huge amount of fat to remove, and think these supermarket products are a rip-off) (the dog 'll get the trimmings in a couple of dinners)
plus
the usual aromatics (carrot, celery, parsnip), plus a couple of home grown red chillies, a couple of sliced flat mushrooms, a sliced fresh jalapeno , a Shallot , ginger, small pouch of tomato paste, splashes of red wine, fresh homegrown flat parsley black pepper salt water .. cooked for as long as it took ... equals YUM.
(just had some rice as the balance)

Enough for three meals for me and a dinner base for a friend. :bgrin

Dinner was quick but lovely:

Salmon tail, seasoned, fried in EVOO.

Wilted spinach.

Thinly sliced fennel bulb dressed with sherry vinegar.

Yum!

Pizza dough had risen nicely after an hour so I put it in the fridge to slowly ferment for the rest of the day. The kneading went really well, dough turned from sticky mess to smooth ball very nicely.

Corn bread is in the oven: had motivation for being so uncharacteristically active: no bread except the corn bread until tomorrow! (Plastic wrapped sliced airpockets within a tasteless starch mix I do not consider to be bread.

Shitful weather in Adelaide—hot and windy with rain. Decided the Central Market could wait till tomorrow.

Have flour, water, yeast, zuchinis, pancetta and buffalo mozzarella cheese.

Pizza!

Making the dough now.

Will make some corn bread too: a soda bread or damper.

Off to the market soon.

Will buy about 5kg Seville oranges—marmalade making time!

Next wood—blood oranges. Blood orange and vanilla marmalade is to die for!

Will make ginger marmalade too. Off to Gaganis after the market, buy some 375ml jars and a bag of new lids—have some jars but can’t see the point in risking a jar of marmalade by using a worn, stained lid!

I will buy a couple Kg more SOs than I need, make some mixed marmalades, mandarin, ginger, 3 fruits with some pink grapefruits, etc.

Got a batch of chicken stock coming to a simmer. Dunno what I will do with it, but I reckon chicken and tomato soup: have two tins peeled tomatoes and 400g chicken leg fillet. Plenty parsley, plenty basil.

Might keep a bit of stock for my veal and white bean stew.

Saw some Angus TBone steaks at the market. Snagged one! Big steak, nice and thick. Haven’t eaten steak for awhile so bought a couple Dutch creme potatoes (boil, slice & shallow fry) and a nice big mushroom to have with it. Cheaper cuts that require long cooking have much more flavor but steak is nice once in a while.

Smart thinking—some baking paper first would have made it easier, probably. (Pastry is kind of a closed book to me ATM.)

Guy I employed at the brewshop used to work at a pizza place: started off every day kneading 20Kg of pizza dough!

He also worked at a landscaping place. Boss told him they were going to a slow payer’s place and thoughtfully selected a pick and a crowbar and loaded them in the ute. Guy didn’t know what to think, looked like intimidation or murder was on the agenda! Nah, they just did some work there. He left not long after that—didn’t like the boss’ sense of humor!

apparently putting toothpaste on a burn as soon as it happens prevents blisters .... used to work at a pizza restaurant and the cooks in the kitchen always had a tube of toothpaste in their for just such an occassion (by toothpaste, I'm talking about the traditional stuff, I'm not sure if the mint, gel or whitening stuff works)
