I do not have a pressure cooker! I would like a pressure canner tho! End of brewday collect some last runnings, quite thin. Fill and seal into jars, pressure cook—instant wort for starting a yeast, errrr, starter!

Saw my former customer again, told him Bulmers Norman is a cider apple tree with lots of tannins, help him make a better cider from his desert apples. Also told him he should macerate his apple scrattings for half a day. Saw his mill/scratter was manually operated. Will lash out a bit more—motorised version! HAH! Made my mango and cardamom butter today, watched the Kenwood moulie attachment press the mango pulp through the fine plate—no need to put shoulder through agony with a manual moulie/foodmill. Just canned it, you have no idea how hot the butter was! OUCH!

He had a really nice sparkling apple juice. Tomorrow will make an appeltaart (apple cake.) Hmm while I was at the Uraidla market I bought a kilogram of banksia honey—it tastes very little like honey! Has hardly any of that typical honey flavor, a flavor all its own, great in baking apparently, use some in the appletaart.
