Saw my former customer again, told him Bulmers Norman is a cider apple tree with lots of tannins, help him make a better cider from his desert apples. Also told him he should macerate his apple scrattings for half a day. Saw his mill/scratter was manually operated. Will lash out a bit more—motorised version! HAH! Made my mango and cardamom butter today, watched the Kenwood moulie attachment press the mango pulp through the fine plate—no need to put shoulder through agony with a manual moulie/foodmill. Just canned it, you have no idea how hot the butter was! OUCH!
